The reason you get those bounce messages is because the spammers don't really care if some of their emails are sent to addresses that are invalid or defunct. In fact, most email software will allow you to change the From or the Reply-to address to whatever you want. Some email servers are smart enough to look in the email headers and easily determine that the person in the From line (in this case, you) didn't really send the message. If they give you flack, tell them to examine the Received lines in the email headers (most email programs let you view the headers if you poke around in the options) and they'll see that the source of the message was not your service provider. It's trivially easy to spoof the From address in an email.
Use your Safe Email Address to send emails to companies who might be harvesting email addresses from incoming emails. Finally, if spam is really bad, create a new personal email address for yourself, tell everyone about the new address (give them several reminders that you are changing email addresses), then delete the old personal email address. Many of these anti-spam filters work on the principle of White Lists (legitimate email addresses that you DO want to receive email from) and Black Lists (spammer email addresses that you do NOT want to receive email from. However, spammers know about catch-all email addresses, and will take your domain name mydomain. Be careful, though, because sometimes these filters are over-zealous and you have to train it to accept emails from mailing lists that you have subscribed to.
Many of them crawl your entire site, following every link, gathering email addresses from your guestbook, your message boards, databases, and everywhere else they can get to.
